Elote Made Easy - Mexican Street Corn

Elote, also known as Mexican street corn, is a bold and delicious way to enjoy fresh corn at its best.

Cooked to perfection, then slathered in a creamy, zesty mix of mayo, lime, cheese, and chili, Elote transforms a simple ear of corn into an irresistible snack or side dish. Whether you're hosting a summer cookout or just craving something different, Elote brings vibrant flavor and fun to your table – and it all starts with the freshest corn.

Cook the Corn

You can use any of these methods:

Grill:

(Traditional Method)

Preheat grill to medium–high. Place corn directly on the grill grates. Cook for 10–15 minutes, turning every 2–3 minutes until nicely charred and cooked through.

Boil:

Bring a large pot of salted water to a boil. Add corn and cook for 5–7 minutes until tender.

Oven-Roast:

Preheat oven to 400°F (200°C). Place corn on a baking sheet and roast for 20–25 minutes, turning halfway through.

Air Fryer:

Preheat to 400°F. Cook corn for 12–15 minutes, turning once.

Dress the Corn

  • While the grilled corn is still warm, squeeze the lime juice on all sides of the corn. Next, generously brush or spoon mayonnaise each ear of corn, ensuring all sides are coated.
  • Evenly sprinkle the elote seasoning over the coated corn.
  • Roll each ear of corn in the crumbled Cotija cheese, pressing gently to ensure the cheese sticks.
  • Arrange the elote corn on a serving platter and garnish generously with fresh chopped cilantro.
  • Serve immediately and enjoy your homemade Elote Corn!

Serving guests and want to simplify the presentation?

Cut the kernels off the cobs while still hot and combine in a single bowl. Mix in your Elote mayo mixture, lime juice and seasoning. Stir to combine and garnish with cotija, cilantro, and a dash of seasoning. For a fun party presentation, once your corn and mayo mixture is combined, spoon into individual serving cups and top with the same ingredients.
